Steamed cauliflower with onions and spices: A comforting classic from Arcadia

- 2 lb (1 Kg) cauliflower
- 12 small onions (about the size of a table tennis ball)
- 20 peppercorns
- 2 bay leaves
- 0.2 oz (5 gr) allspice
- 1 cinnamon stick
- 0.2 oz (5 gr) cloves
- 1 tsp tomato purée
- 0.2 oz (5 gr) salt
- 0.1 oz (3 gr) pepper
- 2 fl oz (50 ml) olive oil
- 10 fl oz (300 ml) water
Instructions
- Place a pan over medium heat.
- Pour in the oil.
- Sauté the onions for 5 minutes until they start to color.
- Add the water, spices and tomato purée, stir well to dissolve the tomato purée and simmer, cover for 40 minutes.
- Meanwhile, clean the cauliflower and cut into medium-sized pieces.
- Add the cauliflower pieces, salt and pepper to the sauce, cover and simmer for a further 8 minutes until the cauliflower has softened a little.
