Low-carb chicken with omelette from Kalavrita

- 1 whole chicken, approximately 63.5 oz (1800 gr), filleted
- 2 fl oz (50 ml) extra virgin olive oil
- 2 medium-sized onions
- 2 cloves of garlic
- 8 fl oz (250 ml) white wine
- 3 fl oz (100 ml) water
- 4 bay leaves
- 4 eggs
- 7.1 oz (200 gr) grated hard cheese
- 1 tbsp flour
- 0.3 oz (8 gr) salt
- 0.1 oz (4 gr) pepper
Instructions
- Finely chop the onions and garlic cloves
- Place the olive oil in a pan over medium heat
- Fry the chicken briefly on all sides and season with salt and pepper
- Remove the chicken from the pan and sauté the onions and garlic for approximately 5 minutes until translucent
- Add the flour and stir
- Deglaze with wine. Add water and cook for approximately 5 minutes
- Heat the oven to 350°F (180 °C)
- Place the filleted chicken in a tray, add the liquid from the pan and place in the oven for approximately 40 minutes
- Shortly before the end of the cooking time, crack and whisk the eggs
- Add the grated cheese and stir everything together
- Remove the dish from the oven
- Add the egg and cheese mixture between the pieces of meat. Put the tray back in the oven for about 10 minutes until the egg mixture is cooked.
