Low-carb chicken with omelette from Kalavrita

Low-carb chicken with omelette from Kalavrita

Serves: 8
Cooking time: 85 minutes

Ingredients

  • 1 whole chicken, approximately 63.5 oz (1800 gr), filleted
  • 2 fl oz (50 ml) extra virgin olive oil
  • 2 medium-sized onions
  • 2 cloves of garlic
  • 8 fl oz (250 ml) white wine
  • 3 fl oz (100 ml) water
  • 4 bay leaves
  • 4 eggs
  • 7.1 oz (200 gr) grated hard cheese
  • 1 tbsp flour
  • 0.3 oz (8 gr) salt
  • 0.1 oz (4 gr) pepper

Instructions

  1. Finely chop the onions and garlic cloves
  2. Place the olive oil in a pan over medium heat
  3. Fry the chicken briefly on all sides and season with salt and pepper
  4. Remove the chicken from the pan and sauté the onions and garlic for approximately 5 minutes until translucent
  5. Add the flour and stir
  6. Deglaze with wine. Add water and cook for approximately 5 minutes
  7. Heat the oven to 350°F (180 °C)
  8. Place the filleted chicken in a tray, add the liquid from the pan and place in the oven for approximately 40 minutes
  9. Shortly before the end of the cooking time, crack and whisk the eggs
  10. Add the grated cheese and stir everything together
  11. Remove the dish from the oven
  12. Add the egg and cheese mixture between the pieces of meat. Put the tray back in the oven for about 10 minutes until the egg mixture is cooked.
