Potato salad holds a special place in Greek hearts, and they love adding a twist—like tossing in some sweet pointed peppers. When it comes to dressing, Greeks have a couple of tricks up their sleeves. Some opt for mayo, just like our recipe here, while others swear by the goodness of olive oil. It’s all about that tasty mix of tradition and flavors!
Spicy potato salad
Ingredients
- 2 lb (1kg) potatoes
- 2 onions
- 3 red pointed peppers
- 2 green pointed peppers
- 2 tbsp mustard
- 15 fl oz (400g) mayonnaise
- 5 gherkins
- 1 tsp salt
- Optional: smoked pork cut into cubes
- 6 tbsp olive oil 3 tbsp wine vinegar salt and pepper (Variation with olive oil vinaigrette)
- 3 tbsp wine vinegar (Variation with olive oil vinaigrette)
- salt and pepper (Variation with olive oil vinaigrette)
Instructions
- Peel and dice the potatoes and boil them in plenty of salted water.
- In the meantime, finely dice the onions, clean, deseed and dice the peppers. Slice the gherkins.
- Mix all the ingredients together in a large bowl and season with salt. Leave in the fridge for a few hours.
- For the version with olive oil: Instead of mayonnaise, mix olive oil, vinegar, salt and pepper to make a vinaigrette and mix well with the salad ingredients.
- If you like, you can also add eggs or smoked pork to the potato salad.
