Served in two charming variations, you can enjoy it as “monos,” a single shot in a petite espresso cup, or go for the “diplos,” a double dose of in a larger coffee cup. The secret to crafting the perfect cup lies in the long-handled copper pot known as the “briki.” It’s prepared with love, traditionally without sugar (sketos), though you can add one (metrios) or two teaspoons (glykos) to suit your sweet tooth.

Greek coffee (Diplos ellinikos metrios)

- 2 tsp Greek coffee
- 1 tsp sugar
- 1 cup of water (still)
- We show the preparation with a gas stove. However, a hob (lowest setting) can also be used.
Instructions
- Turn on the gas hob and place the briki on top
- Add the coffee
- Add sugar
- Stir well
- Bring the coffee to the boil until it starts to foam
- Remove from the gas stove and pour slowly into the cup. Switch off the gas stove
- Enjoy the coffee!
In order to get the perfect foam (known as kaimaki) take the briki off the stove for a few seconds when the coffee starts to boil. Put it back on the stove and the moment it reaches a full boil, take it off the stove again and serve!
