- 10.6 oz (300 gr) wheat berries
- 17.6 oz (500 gr) flat green beans (romano beans)
- 1.8 oz (50 gr) parsley
- 1.1 oz (⅛ cup) (30 gr) olive oil
- 1 pinch of salt
- 1 pinch of pepper
- Water
Instructions
- Soak the wheat berries in plenty of water for at least 2 hours. The longer the soaking time, the shorter the cooking time.
- Clean, wash and cut the beans into pieces (cut the small ones in half and the bigger ones in thirds)
- Add the olive oil to a saucepan and wait until it simmers
- Sauté the beans in the oil
- Add the wheat berries and chopped parsley
- Add enough hot water to cover the ingredients
- Cook over medium heat until the water evaporates
- Season with salt and pepper and serve
