Tzatziki

Tzatziki is by far most famous and beloved dip of Greece. This versatile spread enhances the flavors of vegetables, meat, and fish, and it can even be savoured with just a slice of bread or pita. The secret? The perfect consistency and rich flavor provided by drained Greek yogurt. Get ready to taste the true essence of Greece!

Tzatziki

Serves: 4
Cooking time: 30 minutes

Ingredients

  • 17.6 oz (500 gr) Greek yogurt (or drained yogurt made from cow's or sheep's milk)
  • 1 cucumber
  • 1-2 cloves of garlic
  • ½ bunch of dill
  • 3-4 tbsp olive oil
  • 2 tbsp wine vinegar
  • Salt
  • Black pepper

Instructions

  1. Peel the cucumber and remove the seeds.
  2. Grate it and season with salt.
  3. Place in a sieve and leave to drain for approximately 15 mins.
  4. Add the cucumber to the yogurt. Press in the garlic.
  5. Finely chop the dill and add to the yogurt mixture.
  6. Season with 4 tbsp olive oil, 2 tbsp vinegar, salt and pepper.
  7. Stir well until everything is well combined.
  8. Cover the tzatziki with cling film and leave to infuse in the fridge for 4 hours.
