Tiropita (cheese pie)

A Tiropita (puff pastry filled with feta cheese) is very popular in Greece.

Tiropita (cheese pie)

Serves: 6 people
Cooking time: 50 minutes

Ingredients

  • 21.2 oz (600 gr) feta cheese (crumbled)
  • 6.3 oz (¾ cup) (180 gr) melted butter
  • 17.6 oz (500 gr) puff pastry (many Mediterranean grocery stores sell Fyllo Kroustas from Greece or Baklava pastry)
  • 3 eggs
  • 8 fl oz (250 ml) milk

Instructions

  1. Use butter to grease a baking tray (suggested dimensions: 13×9 inch or 33×23 cm).
  2. Place a layer of puff pastry in the baking tray, until the bottom becomes entirely covered. If the puff pastry is too large, fold it up. Drizzle with a small quantity of melted butter and add some feta cheese on top.
  3. Add another layer of puff pastry, with butter and feta cheese on top.
  4. Repeat the previous step, until all of the cheese and butter is used up.
  5. Fold the remaining layer of puff pastry, and place it on top. Then, using a knife, cut it in pieces of your preferred size.
  6. In a bowl, whisk the eggs, add the milk and stir for a short while. Drizzle it over the pita in the baking tray.
  7. Place in an oven, preheated to 360 ºF (180 ºC) for about 45-60 min, until the puff’s texture turns golden.
