A beloved recipe from Trikala known as the “Lazy Housewife’s Pie” or, as some lovingly call it, “Pie for the Lazy.” A dish where all the ingredients come together with minimal effort. Once a staple in busy peasant households of Thessaly’s Wallachian ethnic group, it was all about quick and satisfying meals on the go. It’s a nod to the practical and delicious side of life in Trikala—where simplicity meets flavor effortlessly.

Lazy Pita: Cheese Pie from Trikala

- 2 cups drained yogurt
- 3 large eggs
- 1 ⅔ cups (400gr) water
- 2 tbsp melted butter
- 8.8 oz (250 gr) feta cheese, grated or crumbled
- 2 cups (130gr) flour
- 3 fl oz (100 ml) milk
- 3 tbsp oil
- 1 sheet of baking paper
Instructions
- Preheat the oven to 150°.
- Place all the ingredients except the oil and milk in a bowl.
- Mix everything well to form a thick batter.
- Moisten the baking paper briefly but thoroughly with water so that it is no longer dry in any area.
- Lay out the paper on the baking tray.
- Pour the oil on top and spread well with a brush or your hand to prevent the dough from sticking.
- Place the dough on the baking tray with the baking paper and spread well.
- Pour the milk over it so that it covers as much of the surface as possible.
- Bake at 150° for about an hour and, as soon as the top of the pie is lightly browned, take it out and taste it. If necessary, put back in the oven for a few minutes.
- Remove, leave to cool slightly and cut into pieces.
